Chickpea Feta Salad

Ingredients
For the salad
  • 1 can chickpeas rinsed and drained
  • 1 medium cucumber chopped
  • ½ cup cherry tomatoes halved
  • 1 sweet pepper chopped (red or yellow)chopped
  • ½ red onion cut into half rings
  • ⅓ cup kalamata olives chopped
  • 4 oz feta cheese crumbled
For the dressing
  • 2 Tbsp olive oil
  •  2 Tbsp red wine vinegar
  • 1 clove pressed garlic
  • Salt and pepper to taste.
Preparation
  1. Place all the salad Ingredients in the bowl and mix well.
  2. Place all the dressing ingredients in a small jar or bowl whisk together and pour over the vegetables.

Ready in 20 minutes

Serves 8 people
