Ingredients
For the salad
- 1 can chickpeas rinsed and drained
- 1 medium cucumber chopped
- ½ cup cherry tomatoes halved
- 1 sweet pepper chopped (red or yellow)chopped
- ½ red onion cut into half rings
- ⅓ cup kalamata olives chopped
- 4 oz feta cheese crumbled
For the dressing
- 2 Tbsp olive oil
- 2 Tbsp red wine vinegar
- 1 clove pressed garlic
- Salt and pepper to taste.
Preparation
- Place all the salad Ingredients in the bowl and mix well.
- Place all the dressing ingredients in a small jar or bowl whisk together and pour over the vegetables.
Ready in 20 minutes
