Pumpkin Spice Pudding

Ingredients
  • 2 packets or 2 scoops Unjury (or other) vanilla protein powder
  • 2 Tablespoons canned pumpkin (not pumpkin pie filling)
  • 1 Package Jell-O instant vanilla pudding mix, sugar free, fat free
  • ¼ Teaspoon pumpkin pie spice
  • ¾ Cup water
Preparations
  1. Empty the Jell-O sugar free instant dry pudding mix into a bowl.
  2. Add pumpkin pie spice to the dry pudding mix and blend dry ingredients thoroughly with a fork.
  3. Mix the Unjury vanilla (or other protein powder) and water together.
  4. Pour the protein and water mixture over the dry ingredients.
  5. Add 2 tbsp canned pumpkin and stir/beat until thoroughly mixed.
  6. Place into small serving size containers and chill in the fridge. (at least 1 hour)

Tips: Garnish with a dollop of fat-free whipped topping or crushed walnuts (stage 3 and beyond)
