Ingredients
- 1 medium eggplant sliced into 1-2” thick slices
- 1 medium zucchini sliced into 1-2”thick slices
- 2 bell peppers core and seeds removed,cut into quarters
- 1 red onion sliced into 2” slices
- 2 Tbsp Olive oil for brushing vegetables
- Seasonings: salt, pepper, garlic powder, italian seasoning
Preparations
- Preheat the oven to 400 degrees F.
- Line the baking sheet with parchment paper . Drizzle with olive oil or spray with nonstick cooking spray
- Place the vegetables on a baking sheet.
- Season with salt ,pepper, garlic powder and Italian seasoning on both sides.
- Brush the vegetables with olive oil on both sides.
- Bake 30-40 minutes until golden brown, flipping sides half way into baking.
Ready in 45 minutes
