Roasted Vegetables

Ingredients
  • 1 medium eggplant sliced into 1-2” thick slices
  • 1 medium zucchini sliced into 1-2”thick slices
  • 2 bell peppers core and seeds removed,cut into quarters
  • 1 red onion sliced into 2” slices
  • 2 Tbsp Olive oil for brushing vegetables
  • Seasonings: salt, pepper, garlic powder, italian seasoning
Preparations
  1. Preheat the oven to 400 degrees F.
  2. Line the baking sheet with parchment paper . Drizzle with olive oil or spray with nonstick cooking spray
  3. Place the vegetables on a baking sheet.
  4. Season with salt ,pepper, garlic powder and Italian seasoning on both sides.
  5. Brush the vegetables with olive oil on both sides.
  6. Bake 30-40 minutes until golden brown, flipping sides half way into baking.

Ready in 45 minutes
