Ingredients
- 1 pound lean ground turkey
- 2 onions, diced
- 1 green pepper, diced
- 1 (14 ounce) can Mexican-style tomatoes (like
Rotel) - 2 (8 ounce) cans tomato sauce
- 2 tablespoons cumin
- 2 tablespoons Chili powder
- 1 teaspoon salt
- ½ teaspoon cayenne pepper
- ½ teaspoon paprika (smoked, preferably)
- 1 (14 ounce) can kidney beans, drained and rinsed
- 1 (14 ounce) can black beans, drained and rinsed
- 1 cup water
- Optional toppings: low-fat sour cream, low-fat Greek yogurt, low-fat shredded cheese
Instructions
- In a large pot or Dutch oven, sauté onions and peppers until soft
- Add ground turkey. Once turkey is cooked through, drain excess grease
- Add tomatoes, cumin, Chili powder, salt, cayenne pepper, paprika and water. Bring to a boil.
- Add beans. Cover and simmer for 1-2 hours
- Serve with or without toppings
