Turkey Chili

Yield: Makes approximately 8 cups (64 1oz portions)

*Suitable for soft diet and beyond

Ingredients
  • 1 pound lean ground turkey
  • 2 onions, diced
  • 1 green pepper, diced
  • 1 (14 ounce) can Mexican-style tomatoes (like
    Rotel)
  • 2 (8 ounce) cans tomato sauce
  • 2 tablespoons cumin
  • 2 tablespoons Chili powder
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper
  • ½ teaspoon paprika (smoked, preferably)
  • 1 (14 ounce) can kidney beans, drained and rinsed
  • 1 (14 ounce) can black beans, drained and rinsed
  • 1 cup water
  • Optional toppings: low-fat sour cream, low-fat Greek yogurt, low-fat shredded cheese
Instructions
  • In a large pot or Dutch oven, sauté onions and peppers until soft
  • Add ground turkey. Once turkey is cooked through, drain excess grease
  • Add tomatoes, cumin, Chili powder, salt, cayenne pepper, paprika and water. Bring to a boil.
  • Add beans. Cover and simmer for 1-2 hours
  • Serve with or without toppings
